Les tailler en gros cubes puis les faire cuire \u00e0 l&rsquo;eau bouillante sal\u00e9e pendant 20 minutes. \u00c9goutter, s\u00e9cher et passer \u00e0 la moulinette.<br \/>\n2.Dans une casserole, pr\u00e9parer la sauce b\u00e9chamel : faire fondre le beurre, verser la farine et remuer ; ajouter le lait bouillant ; porter \u00e0 \u00e9bullition sans cesser de tourner et laisser \u00e9paissir. Assaisonner de sel, de poivre et de noix de muscade r\u00e2p\u00e9e.<br \/>\n3.S\u00e9parer les blancs des jaunes d\u2019\u0153ufs.<br \/>\n4.Dans un saladier, m\u00e9langer la sauce b\u00e9chamel \u00e9paisse avec la pulpe de carotte, les jaunes d&rsquo;\u0153ufs et cr\u00e8me fra\u00eeche. Remuer.<br \/>\n5.Monter les blancs en neige fermer et les incorporer d\u00e9licatement \u00e0 la pr\u00e9paration.<br \/>\n6.Verser dans un moule \u00e0 souffl\u00e9 beurr\u00e9.
